The purpose of ozone in the food processing industry has four aspects: one is to inactivate microorganisms-disinfection; second oxidative decomposition of organic or inorganic pollutant gases-deodorization and purification; three types of metabolism in fruits and vegetables to inhibit the ripening process- Preservation; Fourth, degradation of pesticide residues in foods such as fruits and vegetables-solution residues. The development and application research foundations of the four aspects all depend on the strong oxidation technology performance of ozone and its unstable and easily decomposable characteristics. Specific applications in the food processing industry can be applied to the food and fresh fruit industry.
Using ozone to disinfect the workshops of food production and processing enterprises can kill 80% of the natural bacteria in the ambient air at 0.5-1.0 ppm. Cold storage disinfection requires an ozone concentration of 6~10ppm, the killing rate of bacteria after shutdown is about 90%, and the killing rate of mold is about 80%.
Only 30-60 minutes of ozone half-life. Because it is unstable and easy to decompose, it cannot be stored as a general product of the enterprise, so it needs to be manufactured on site. Precautions for the mobile ozone generator in ozone sterilization
1. It is forbidden to use it in an environment with conductive gas or explosive media, because the mobile ozone generator is usually powered by high frequency and high voltage sources.

Ozone has a strong oxidizing ability, so attention should be paid to the corrosion resistance of similar rubber products, wood products, and iron. In addition, ozone may irritate the respiratory system (it is recommended that ozone sterilization be carried out in a non-existent state). The mobile ozone generator is suitable for heights of 2.8 meters higher than 2.8 meters or equipped with ventilation systems, poor workshop sealing, etc. Please increase the equipment configuration or increase the number of equipment to avoid affecting the sterilization effect; the ozone sterilization time is before work in the morning and after get off work in the evening.
